A popular South Indian banana stem recipe.
Ingredients:
Chopped banana stem - 2 cups
Moong dal - 1/4 cup
Turmeric - 1/4 tsp
Black pepper - 1 tbsp
Urad - 1 tbsp
Red chili - 4
Cumin - 1 tsp
Coconut - 1/4 cup
For Tempering:
Coconut oil - 3 tsp
Mustard - 1/2 tsp
Urad - 1/2 tsp
Curry leaves
Salt to taste
Method:
- Soak chopped banana stem in water or buttermilk.
- Pressure cook moong dal, banana stem with turmeric.
- Add water just enough to cover the top layer.
- Meanwhile roast the pepper, urad, cumin, red chili in a tsp of coconut oil.
- Add coconuts and cool them.
- Grind to a fine paste.
- Mash the dal using the back of your spoon.
- Add the ground masala.
- Adjust water consistency and let it boil.
- Temper with mustard, urad, and curry leaves in coconut oil.
