Carrot Kheer/Payasam is a healthy recipe liked by kids. A natural energy drink for kids right after school.
This is a simple recipe packed with nutrients. Payasam is made for all occasions or poojas at home, why not try different varieties.
Preparation Time: 10 mins | Cooking Time: 30 mins |Serves: 4
Ingredients:
Almonds - 10 nos
Cashew - 4 nos
Carrot - grated 1 cup
Milk - 4 cups (I have used D milk)
Cardamom - 1/4 Tsp
Sweetened condensed milk/milkmaid - 1 cup or to taste or just add sugar
Method:
- Soak almonds and remove skin.
- Grate carrot and keep.
- In a pan add 1 tsp ghee, saute the carrots for 2 to 3 mins. Add milk and bring it to boil.
- Grind the almond and cashew, and add to the boiling milk.
- Keep stirring until it starts to boil. Now it starts to get a little thicker.
- Add the condensed milk, add the cardamom powder, bring it boil and switch off.
- Kheer ready. Have it warm on cold days.
- Make it a kulfi by adding more nuts and freeze in Popsicle maker.
- Yummy kulfi, on a happy summer day.
