Kadai Paneer


Kadai paneer is a colorful and a popular dish in Indian and Punjabi cuisine. It has a spicy gravy made with onions, tomatoes and cashews. I have made the gravy version. 
Traditionally its made with green capsicums, I have used red and yellow to bring out the colors.The addition of the fresh ground chili and dania brings great taste and flavor to the recipe. You would really fall in love with this recipe. 

Preparation Time :20 mins | Cooking Time : 15 mins |Serves: 4
Ingredients:

Paneer - 7 oz/200 gms
Capsicum green/red - 1
Onion - 2
Tomato - 2
Cashews - 10 to 15 nos
Dania seeds - 2 tsp
Kashmiri chili - 6
Ginger garlic paste - 2 tsp
Garam masala - 1 tsp
Kasoori methi - 1 tsp
Oil
Salt to taste

Method:
  • Coarsely grind the chili and dania.

  • Cut and keep the veggies in two batches one to fry and grind, the other to fry and add to the gravy.

  • Now lets prepare the masala. Fry the onions, tomatoes and cashews. 

  • Remove from kadai and let it cool, meanwhile fry the other batch of veggies with little oil.

  • Set them aside and in the same kadai add oil and fry the ginger garlic paste.When the flavor comes out add the ground chili coriander powder and fry them in the oil.


  • Now add the ground onion mix. Fry for a while and add water as needed.


  • Bring it to boil, add salt, garam masala and kasoori methi.
  • Add the fried veggies, mix and blend the veggies in the gravy.

  • Garnish with coriander while serving. Enjoy with roti/nan/pulao.....
