Tomato & Cashew Chutney


This chutney is very special at our home, one of my dad's favorite recipe. My mom makes it the perfect way. Call it chutney, thokku what ever......
We call it Appukutty chutney. Appukutty is one of my dad's friend where my mom found this recipe. So when we refer to the chutney we had in their house, it eventually got its name as Appukutty chutney. My mom prepares this when ever there is a special occasion, for its richness and taste. It may look simple but you really need patience to cook it in a right way.

Preparation Time :10 mins | Cooking Time : 25 mins |Serves: 4
Ingredients:
  • Cashew - 10 nos broken to pieces
  • Garlic - 6 cloves chopped 
  • Onion - 1 big finely chopped
  • Tomato - 3 chopped
  • Chili powder - 1 tbsp 
  • Turmeric powder - 1/4 tsp
  • Mustard - 1/2 tsp
  • Urad - 1/2 tsp
  • Oil
  • Salt to taste
Ingredients to grind:
  • Coconut - 1/4 cup
  • Cashew - 4 nos
  • Poppy seeds - 2 tsp
Method:

  • Keep all the ingredients ready. Soak the poppy seeds and 4 cashews, grind it along with the coconut.

  • In a wide pan add oil and season with mustard and urad. When splutters add cashew and then garlic. Fry till they change color. 


  •  Add the chopped onions and fry till the oil leaves. 

  • Now add the tomatoes and fry them till they blend and oil separates.

  • Now add the cashew and coconut paste and let it boil till the oil comes out.

  • Garnish with coriander. 
  • Chutney is ready to serve. It goes well with idli/dosa.
