Vendakkai thoran is a Kerala recipe, a well accompanied side dish for rice and sambar/rasam. It is low in calorie and high in dietary fiber.
It also helps in controlling your blood sugar. I can keep writing a lot of health benefits from okra, but lets go on with the recipe....
Preparation Time :10 mins | Cooking Time : 15 mins |Serves: 4
Ingredients:
Vendakkai/Okra - 15 to 20
Pearl onions - 3 to 4
Coconut - 1/2 cup
Onion - 1 small

Chili powder - 1/2 tbsp
Turmeric - 1/4 tsp
Mustard - 1/4 tsp
Urad - 1/4 tsp
Curry leaves
Oil
Salt to taste
Method:
- Coarsely grind coconut with pearl onions and chili powder and keep.
- Cut the okra into slices or long strings, chop the onions.
- In a pan add oil and season with mustard, urad. When splutters add curry leaves and onions. Fry for a while and add okra.
- Add salt and turmeric when half cooked. Stir fry until they are soft, dry and cooked.
- Now add the ground coconut mix and fry for 5 mins.
- Vendakkai thoran is ready to serve. Its a good accompaniment with rice and sambar/rasam. We like to have it even with roti.
