Javvarisi/Sabudana Bonda



Since this week is Navarathri, I thought of giving some snack ideas to treat your guest.
My sister makes this at her house during the festival. I learnt this recipe from her. Its a finger snack so no messing around.

Preparation Time : 5 mins | Cooking Time : 10 mins |Serves: 4

Soaking time for Javvarisi - 3 hrs
Ingredients:
Javvarisi - 1/2 cup
Buttermilk - 1 cup
Maida - 1 cup
Rice flour - 1/2 cup
Onion - chopped - 1 small size 
Ginger grated - 1/2 tsp  
Green chili chopped - 1/2 tsp
Cilantro chopped - 1 tbsp
Mint chopped -  1tbsp
Salt to taste
Oil to fry

Adjust chili and salt to your taste.

Method:
  • Soak the javvarisi in buttermilk for 3 hrs. The javvarisi absorbs the water and forms a thick base to add the ingredients.
  • Add rest of the ingredients and make a  dough consistency just like you make for pakodas. No need to add water unless necessary.

  • Heat oil in a pan and make balls or start dropping the mix like pakodas directly in the hot oil.


  • Fry until the color the changes to golden brown. When done, drain them on a paper towel.  
  • Serve hot and crispy bonda/pakoda with any variety of chutney. I like them as it is. 

Note: Add water to adjust your bonda mix if it is too dry. If it is too wet adjust your flour ratio.
