Kids really enjoy and its a very healthy drink as badam is good for memory power and gives lot of energy if they are into sports activities. Instead of plain milk one glass of badam kheer will boost their energy level. Consuming soaked badam is more healthier than eating it raw.
Preparation Time :10 mins | Cooking Time : 45 mins
Ingredients:
- Milk - 1/2 Gallon (I have used vit D milk)
- Almonds - 1 cup
- Saffron - 10 strands
- Sugar - 2 cups or to taste.
Method:
- Soak the almonds in warm water for 4 hrs, peel and grind to a coarse paste. Add milk to grind the paste if needed.
- Use a large heavy bottom pan to boil the milk.
- Keep stirring the milk so that it doesn't burn the bottom.
- Milk starts to make cream in the sides. Keep scrapping. Reduce to 3/4th.
- Mix the ground almond paste to the boiling milk, keep it boiling for 5 mins.
- Add sugar and boil for another 5 mins.
- Switch off and now add the saffron, stir and rest it cool.
- Store in refrigerator before serving.
- Garnish with slivered almonds (optional).
