Ingredients for chicken stock:
chicken - 1/4 kg
garlic - 3 to 4
carrot - 1
spring onions - 3 stalks
celery - 1 cup
salt 1/2 tsp
bay leaf - 1
star anise - 1
black pepper - 1/2 tsp
water - 6 cups
Ingredients for egg drop soup:
ginger - 2-inch ginger
soy sauce - 1 tbsp
white pepper - 1 tsp
eggs - 2
spring onions - 2 tbsp
salt to taste
Method:
- Add all the above-mentioned ingredients and slow cook for 1 hr to 1 1/2 hr
- Add some salt to taste
- Remove the scums in between the cooking process using a spoon
- Remove the chicken pieces when done, so that it doesn't splash when pouring the stock
- Drain the stock and discard the veggies
- Clear chicken stock is ready to use
- Whisk 2 eggs and keep them ready
- Add the ginger pieces, spring onions, soy sauce, salt, and white pepper to the stock
- Bring to boil and let it cook for few mins
- Simmer the stove and make a circular motion using your saddle. Slowly pour the eggs
- Garnish with spring onions
- Serve hot and add pepper to your taste
