Sambar is an authentic recipe for South Indian cooking. Its made in different varieties at different parts of the south.
I tried this recipe form another cooking site and really like the flavor and taste of it. So I wanted to share this recipe with all.Preparation Time: 15 mins | Cooking Time: 20 mins |Serves: 4
Ingredients:
Pearl onions/Chinna vengayam - 15 to 20
Tomato - 1 medium
Toor Dal - 1 cup
Coconut - 1/2 cup
Tamarind extract - 1 cup
Sambar powder
Turmeric
Jaggery - gooseberry size ball
Salt to taste
Oil for tempering
Seasoning/Tempering ingredients:
Mustard
Jeera
Methi seeds/ vendayam
Asafoetida
Curry leaves
Coriander
Method:
- Cook the toor dal with tomatoes and turmeric.
- In a pan add little oil and saute the onions and curry leaves.
- Add the tamarind extract, bring it boil.
- Add the sambar powder, turmeric, jaggery, and salt. Let it boil for 5 mins.
- Mash the dal with a spatula. Add the tamarind mix to the dal and bring it boil.
- Add the ground coconut to the sambar, bring it to boil and switch off. No need to boil for long.
- Now do the tempering, with the above-mentioned ingredients, add it to the sambar. Always tempering at last keeps the aroma of the sambar.
- Aromatic sambar is ready to have with rice/idli/dosa.
