Vegetable cutlet is one of my all time favorite snack. It turns out to be perfect each time I make them. Delicious Indian snack for all age group. Easy ingredients make it simple and tasty.
People liked to order them when I was catering back in Michigan. It was always in my menu when there is a party or get together.

Ingredients:
Potatoes - 2 big
Onions - 1 small finely chopped.

Carrots - finely chopped 1 cup
Beans - finely chopped 1 cup
Green peas - 1/2 cup

Maida/All purpose flour - 4 tablespoon (mix with water and keep)
Bread crumbs - 1 cup or as needed to cover and roll.
Chili powder - 1/2 tsp
Turmeric powder - 1/4 tsp

Method:
- Cut and keep all the veggies. Cook the potatoes, peel and mash it.
- In a pan add a tsp of oil, saute the onions. Add the veggies one by one.
- Add chili powder, turmeric powder and salt. Fry and mix.
- Add the mashed potatoes and mix everything to blend together. Switch off and rest it to cool.
- The mixture should be dry. Now make balls and keep them ready to coat and roll.
- Dip the cutlet into the maida mix, coat well and roll it in the bread crumbs, coat well by pressing the bread crumbs and bring it to your desired shape.
- Make all the cutlets ready to fry.
- Make sure your oil is hot, shallow fry in batches. Don't crowd them. Fry on both side until golden brown. It hardly takes 2 to 3 mins each side.
- Enjoy your yummy cutlets while they are hot with some ketchup or mint chutney.
