Badam Halwa




A delicious sweet/dessert recipe made from pureed almonds, sugar and ghee. It is a popular sweet which you can see in any South Indian wedding food menu. The halwa is folded in parchment paper and made into small packets.
My sister made this for my niece house warming ceremony, and it was absolutely tasty. Its almost a year now, when I remembered that, this recipe came into my mind and thought of sharing it.

Preparation Time : 5 mins | Cooking Time : 25 mins | Serves : 4

Ingredients:

Badam - 1 cup
Sugar - 1 cup
Milk - as required to grind
Ghee - 1/2 cup
Saffron strands - 1 big pinch
Yellow food coloring - optional

Method:
  • Soak badam in water over night or for a minimum 2hrs, peel and grind them into a fine paste.
  • In a pan add the ground badam paste, sugar and start to cook in medium heat.

  • Mean while soak some saffron strands in warm milk, here I have used the water cleaned form the badam ground jar. Add color powder a pinch if desired.
  • Keep stirring.
  • When it starts to thicken add the saffron milk.

  • Keep stirring and add ghee little by little as it gets thicker.

  • Cook until they leave the sides and form a semi thick consistency.

  • Add one spoon of ghee if needed and switch off.
  • Add some nuts and saffrons for garnishing, serve warm.


Note: Cup measurements I have used is a rice cooker cup. Whatever cup you use make sure you use the same cup for all the measurements.
