Carrot Rice


A simple, tasty, and kid-friendly recipe perfect for a lunch box. 

Ingredients:
carrot - 1 cup
cooked rice - 2 cups
green chili - 4
red chili - 4
onions - 1 medium size
turmeric - 1/4 tsp
chili powder - 1 tsp
cashews - 2 tbsp
salt to taste 
oil - 2 tbsp
cilantro for garnishing

For Tempering:
mustard - 1/2 tsp
urad - 1/2 tsp
channa dal -1 tsp


Method:
  • In a wide pan, add oil and temper with mustard, urad, and channa dal.


  • When it splutters add cashews, green chili, red chili, and fry to golden brown.

  • Add sliced onions and fry until translucent.

  • Add turmeric, chili powder, and salt to taste.
  • Add the grated carrot and fry for a couple of minutes.

  • Add the cooked rice and mix all together.

  • Garnish with cilantro.
