Peanut Butter Fudge

Sometimes when we browse for a recipe we end up with some quite easy and interesting recipes. This is one such I came across. Looks just like Mysore Pak. I felt you cannot make a sweet easier and quicker than this. You should also try using brown sugar instead of white sugar. Another variation you can try is by adding some cocoa powder.

Preparation Time: 5 mins | Cooking Time: 5 mins | Makes: 24 pieces

Ingredients:
  • Unsalted butter - 1 cup
  • Peanut butter(sugarless) - 1 cup
  • Salt - 1/4 tsp
  • Vanilla extract - 1 tsp
  • Powdered sugar - 1 1/2 cup

Method:
  • Add 1 cup unsalted butter, 1 cup peanut butter, and 1/4 tsp of salt(Kosher preferably)

  • Whisk together on low heat.

  • Let it start to boil.
  • Add a tsp of vanilla extract when bubbles all around. Switch off the flame.
  • Add the mix to a 1 1/2 cup powdered sugar.
  • Mix well to make a soft dough consistency.

  • Transfer to a container with plastic wrap/parchment paper in it. This makes it easy to remove the fudge for cutting.
  • Cover and refrigerate for 15 mins.
  • Remove from wrap and cut into bite-size pieces.

  • Refrigerate again for 30 mins.
  • Enjoy delicious peanut butter fudge.
