Russian Tea Cakes


Happy new year 2020 to all. A simple pastry that is commonly

made during Christmas. I can't believe I got attracted to baking this recipe when my friend Saleema had shared this recipe in our group, of course, it was originally got from another website. 
I would say these are soft buttery walnut cookies coated in sugar. A holiday cookie looks more like a snowball. This recipe worked perfectly for me and I hope it will for all those want to try.

Preparation Time: 20 mins |Cooking Time: 30 mins |Makes: 30 nos

Unsalted butter - 1 cup
Confectionery sugar/ Powdered sugar - 1/3 cup
All-purpose flour - 2 cup
Vanilla essence - 1 tsp
Salt - a pinch
Walnuts/Pecans or Hazelnuts - 1 cup
Confectionery sugar/ Powdered sugar - For coating - 1/2 cup

Method:
  • Bring butter to room temperature.
  • Dry roast the walnuts at low heat for 3 to 4 mins. Cool them. Preheat oven to 350 degrees at this time.

  • Chop the walnuts.
  • In a mixing bowl add sugar, walnuts, vanilla essence, salt, all-purpose flour.

  • Mix with hand, until you get a crumbly mixture and all butter is mixed well.
  • Make a small ball and start arranging in a baking tray.

  • Cook in the middle rack of the oven at 350 degrees for about 20 mins or until it turns a light brown in color.

  • When done cool them for about 5 mins and start rolling the cakes in powdered sugar. This will be the first layer of sugar.

  • Now cool them completely, and coat again in the powdered sugar.

  • Now it is fully covered and all ready to eat.
Note:
1. If you find it hard to make the balls, just add drops of milk.
2. Don't melt the butter. It has to melt in the warmth of your hands. This will bring the flaky texture.
