Carrot Halwa

Carrot Halwa is an Indian dessert made from shredded carrots and
milk slow cooked and reduced with sweetness from sugar and flavor from elaichi and ghee is a mouthwatering dish. Its mostly accompanied by vanilla ice cream and is a popular dessert during parties and functions. 

There are a lot of variations like adding koya, condensed milk and so on...I have added badam for that extra richness and taste. Hope everyone enjoys trying this recipe.

Preparation Time :10 mins | Cooking Time : 40 mins | Serves: 6
Ingredients: 
Carrots grated - 1cup
Milk - 1 cups(approx)
Sugar - 1 cups
Elaichi - 1/4 tsp
Cashews as needed
Badam - 10 nos - grind coarsely
Condensed milk - 1/2 cup optional
Ghee - 2 tbsp

Method:

  • Add the grated carrots in a pressure cooker and add milk until it soaks.

  • Pressure cook for 2 whistles. This reduces some time of the cooking process.
  • Keep stirring until all the milk gets reduced.
  • Now add the badam paste. Blend them all together. Add condensed milk at this stage.

  • Add the sugar and cook again till it reduces, as it will start getting diluted from the sugar.
  • When the carrots turn to a halwa consistency add the ghee and cardamom powder.
  • Garnish or add fried cashews to the halwa. Enjoy halwa while it is warm. Its a good combination with vanilla ice cream.
