A delicious version of biriyani with aromatic flavors for a vegetarian one pot meal.

Ingredients:
Paneer - 200 gms
Basmati rice - 3 (cup soak for 1/2 hr)
Onions - 2 (fry and keep one onion for garnish)
Green chili - 4 to 5 slit
Ginger garlic paste - 1 tsp
Mint - a handful
Bay leaf - 2
Cinnamon - 2 small sticks
Cloves - 4
Star anise - 1
Kalpasi/Daggad phool - 1 small piece
Elaichi/Cardamom - 3
Oil
Salt to taste
For Marination:
Curd/yogurt - 1 1/2 cup
Ginger garlic paste - 1 tbsp
Lemon juice - 1 tbsp
Green chili finely chopped- 2
Mint chopped - 1 cup
Coriander leaves chopped - 1 cup
Chili powder - 1 tbsp
Turmeric - 1/4 tsp
Garam masala - 1 tsp
Salt to taste
Method:
- Marinate the paneer with the ingredients mentioned above for a minimum of 30 mins.
- Other ingredients for the biriyani.
- In a cooker add oil and season with the masala ingredients.
- Add onions, green chili and fry until they change color.
- Add ginger garlic paste and mint leaves, saute for a while.
- Add the marinated paneer and fry for 2 to 3 mins.
- Add the soaked basmati rice.
- Add 4 cups of water.
- Pressure cook for 2 whistles.
- Garnish with the fried onions and cilantro.
Note:
1.When you measure water keep in mind the curd quantity.
2.Fried onions gives a great flavor to this biriyani so don't omit it.
3.We have used curd for sourness, so avoid tomato.
