Akkaravadisal

Akkaravadisal is a traditional Iyengar recipe similar to sakkarai pongal. The richness of the the milk, saffron and ghee are the key ingredients of this recipe.
We usually make sakkarai pongal during pongal, this time I wanted to try this akkaraivadisal and it turned out real yummy and tasty.

Preparation Time :10 mins | Cooking Time :25 mins | Serves: 6

Ingredients:
Rice - 1 cup
Moon dal - 1 tbsp
Jaggery - 1 1/2 cup
Milk(whole) and water - 3:1 ratio - 4 cups
Cooking camphor - 1 small pinch
Saffron - few strands
Cashew - as needed
Ghee - 1/2 cup or as needed

I have used a cup which comes with the electric rice cooker. Approximately it is 150 ml.

Method:
  • Take the rice and moong dal, wash and drain the water. Add 3 cups milk and 1 cup water and few strands saffron. Pressure cook for 4 whistles.

  • Meanwhile take the jaggery add little water, bring it to boil until it all dissolves.
  • Once the steam settles open the cooker and mash the rice with a ladle.

  • Add the jaggery water, camphor. Mix all together. Add more milk if needed.
  • Cook in low flame for 2 to 3 minutes. The consistency is like a rice pudding.

  • Add elaichi powder, roasted cashews and ghee.
  • Add more ghee while serving.
