Dry roast mutton chops made in a simple way, is a great recipe for learners. Usually it is a semi dry gravy, packed with flavors.
My family likes the charred flavor of the chops, so I have fried them on an iron tawa to get the roasting flavors. Perfect for an appetizer. Will keep posting the other methods of making them.....

Ingredients:

Mutton Chops - 10 pieces
- Curd/yogurt - 1 cup
- Turmeric powder - 1/2 tsp
- Chili powder - 1/2 tsp
- Salt to taste
Ingredients to grind:
- Ginger - 1 inch
- Garlic - 8 cloves
- Pepper - 1 tbsp
Method:
- Grind the ginger garlic and pepper to a fine paste.
- Add all the ingredients and marinate the mutton for a minimum of 30 mins.
- Add 1 cup of water and pressure cook for 10 whistles. The mutton should be tender soft.
- Reduce and save the gravy, you can use it for rice/dosa/roti.
- Take the mutton piece and fry on a tawa until charred.
- Fry them on both side.
- Sprinkle curry leaves and toss for a minute.
- I kept some chops in the gravy.
- Enjoy the dry one as appetizers and the gravy with rice/roti.
