This is an easy version of stuffed brinjal recipe. Very less ingredients but don't have to compromise on the taste. I found this method easy when doing large quantities.
A south Indian style kathirikkai chops which goes well with pulao, or even as a side dish for roti or any rice variety.
Preparation Time :10 mins | Cooking Time :25 mins | Serves: 4
Ingredients:

Kathirikkai - 8 small ones
- Onion - 1 big size sliced
- Turmeric powder - 1/2 tsp
- Chili powder - 1/2 tsp
- Salt to taste
- Oil
Masala Ingredients to grind:
- Dania - 1 tbsp
- Dry red chili - 6
- Channa dal - 1 tbsp
- Peanut - 1 tbsp
- Tamarind - 1 inch
Method:

Roast the ingredients for the masala with little oil.
- Cool and grind them with little salt.
- Slit the brinjals as shown below and put them in water. Try to remove the hard part which I am holding. If not just cut out the top.
- In a wide pan add some oil and spread the onions. Sprinkle some salt just for the onions.
- Stuff the brinjals with the ground masala and place on top of the onions.
- Drizzle some oil for the brinjals. Close with a lid and cook in low heat.
- Open and mix after 10 mins. The moisture from onions will help cook the brinjals. No need to add water. Close and cook for another 10 mins.
- Now add turmeric and chili powder. Cook for another 5 mins.
- The oil seperates and the brinjals would be soft for now. Sprinkle cilantro and curry leaves.
- Serve with pulao/rice or roti.
