Dragon Chicken


Dragon chicken was one of my favorite starters at Palmshore restaurant in Chennai. I miss those restaurant foods in Chennai. I feel I don't get that spice level here. This recipe was in my mind for a long time to make it for my channel and blog. I checked out for a lot of recipes, this was quite simple and nailed it by making some changes like adding brown sugar. I wanted to make this with just chicken and cashews but ended up adding bell peppers to it. Chicken pieces need to be even smaller than what has come out here. I will try doing it again and update here just with the cashews. But believe me, it was great.

Ingredients:

For Marination:
Chicken breast boneless - 500 gms
Egg - 1
Soya sauce - 1 tsp
Red chili sauce - 1 tsp
Black pepper powder - 1 tsp
Corn flour - 1/4 cup
All-purpose flour/Maida - 1/4 cup
Salt to taste
Oil to fry

For Sauce:
Oil - 2 tbsp
Ginger finely chopped - 1 tbsp
Garlic finely chopped - 1 tbsp
Cashews - 1/4 cup
Soya sauce - 1 tbsp
Red chili sauce - 1 tbsp
Ketchup - 1/4 cup
Sugar - 1 tsp

Onions - 1/4 cup
Bell peppers - 1/4 cup each - use different colors


Method:

  • Add the above-mentioned ingredients for marination.



  • Mix well and rest for 30 mins.
  • Fry in batches to a golden brown. Double fry for extra crispiness.

  • Add finely chopped ginger and garlic to 2 tsp oil.
  • Add the cashews and fry until the color changes.

  • Add onions and bell peppers.
  • Add soy sauce.
  • Sprinkle some salt just for the veggies.
  • Add in the chili sauce.
  • Add ketchup.
  • Give them a good mix.
  • Little water just for the chicken to absorb the sauce.
  • Add a tsp of brown sugar or regular sugar.
  • Now add the fried chicken and stir fry.

  • Enjoy your dish while it is hot and crunchy.
