Aval Cutlet



Being at home craves for frequent snacking. With minimal
shopping and ingredients at home making different snacks have been challenging. Even though these quarantine days have made us running out of ideas, trying to clear all those long left pantry items gives us new and creative ideas. A new recipe for me would be regular cooking for others. As in my family aval is not consumed frequently, I was wondering what to make of my one cup aval that has been sitting in my pantry. I even don't use it for my Dosa batter. My school friend (Sirisha) gave me the idea of making an aval cutlet. I knew this would definitely be a good snack for my family. It was quite easy, just the way you make a regular cutlet but add these soaked and ground aval to it. It was quite crispy and tasty. I prefer to keep the aval half ground just to have the feel of consuming aval. You could grind it finely if you wish.


Preparation Time: 30 mins |Cooking Time: 15 mins |Serves: 4


Ingredients:

Aval - 1 cup
Potatoes - 8 small ones
Onion - finely chopped - 1/4 cup
Carrots - finely chopped - 1/4 cup
Beans - finely chopped - 1/4 cup
Cilantro - few
Green Chili - 3 nos
Turmeric - 1/4 tsp
Chili powder - 1/2 tsp
Salt to taste
Oil to fry

Method:

  • Wash and soak aval for a minimum of 1 hour. For thin poha 10 mins should be enough.

  • Grind it in a mixer. I have done a coarse mix.   

  • Peel and mash boiled potatoes.

  • Finely chop all veggies.
  • Add the ground aval.
  • Add salt, chili powder, turmeric.
  • Add chopped veggies. Mix up altogether. 

  • Make the desired shapes.

  • Fry in oil until golden brown.


  • Drain them on a paper towel.
  • Serve hot.
Note:
1. You can grind half batch to fine paste to make it easy for binding. In this way, you wouldn't lose the taste.
2. If you feel your cutlet is breaking add a teaspoon of besan mixed with water and use it as a coating before you fry.
3. You can use the traditional way of dipping in maida paste and then rolling on to bread crumbs.
4. Adjust spices according to your taste.
5. Avoid green chillis if you have little ones at home.
