Milagu Vadai


Milagu vadai is a famous vada made for the lord Anjaneyar. This is a recipe I learned from my grandma. She is an expert and makes them during Diwali and brings us in large tins. If we were at her place she makes us grind the batter, the traditional way of grinding in hand. Maybe that's the reason we don't get the taste of grandmas recipe.

Avoid garlic for pooja purposes. 

Garlic and curry leaves give a good aroma to the vada.

Ingredients:

Urad dal - 1 cup
Pepper - 1/2 tsp
Garlic - 2 garlic cloves(Avoid the garlic if it is for pooja purpose)
Curry leaves
Rice flour - 1 tbsp(optional)
Salt (to taste) - 1/2 tsp
Oil to fry


Method:
  • Soak urad for 30 mins with water just enough to cover them.
  • Coarsely grind them in a mixer draining all the water if any.

  • Coarse grind the pepper, curry leaves, and garlic.
  • Combine all together with salt.


  • I use a flat cup as a base to get even size.

  • Make a hole in the middle, and remove them with wet hands and drop in hot oil. The wetness allows the vada to drop from your hand easily.
  • Fry them in medium heat to get cooked evenly. Flip and cook until the bubbles stop and get the desired color.


  • Store them in an airtight container.  

Note: 
If your batter turns wet, add rice flour or urad flour. I try not to add them. It turns out crispy even without the rice flour. But I highly recommend adding rice flour if you are trying it for the first time, as it is easy to handle the batter.
