Rice kheer is a rich pudding made of rice, milk, sugar, and saffron.
A very minimum ingredient but a rich recipe. You will be surprised by the quantity it makes with a handful of rice. Sugar can be substituted with milkmaid to make it even easier.

Ingredients:
Basmati rice - a handful - 50 gms
Milk - 2 cups
Sugar - 1 cup
Badam - for garnishing
Elaichi(optional) - a pinch
Saffron - a pinch
Method:
Basmati rice - a handful - 50 gms
Milk - 2 cups
Sugar - 1 cup

Method:
- Take a handful of basmati rice, wash.
- Add milk.
- Pressure cook for 5 to 6 whistles.
- Open when steam goes down. You can see the milk color changed to light pink.
- Now add sugar and boil for 5mins.
- Switch off and add saffron, chopped badam.
- Refrigerate and serve chill.
