Avial is an authentic Kerala dish an essential part of Onam sadya.
It is also famous in Udipi. A mix of veggies cooked with coconut paste and finished with the sourness from the curd and aroma of coconut oil.Locally available veggies are usually used in this dish.
Preparation Time :20 mins | Cooking Time :20 mins | Serves: 4
Ingredients:
Drumstick - 8 to 10 pieces
Carrot - 1 cup
Beans - 1 cup
White pumpkin - 1 cup
Vazhakkai/raw banana - 1 cup
yogurt - 1 cup
Turmeric - 1/4 tsp
Salt as needed
Coconut oil - 2 tbsp
To Grind:
Coconut - 1 cup
Jeera - 1 tbsp
Green chilli - 4 to 5
Method:
- Cut all the veggies in similar size and length.
- Add salt,turmeric, sprinkle some water and cook the veggies for 5 to 7 mins.
- Add the ground coconut paste and let it boil for a minute or two.
- Let it warm down then add yogurt and coconut oil.
- Mix all together and serve. Avial goes well with sambar rice/ adai....
Note:
1.Use less turmeric if you would like your avial to be white.
2.You can add 3 to 4 shallots when grinding the coconut paste.
3.Try to avoid water as pumpkin leaves lot of water which will be sufficient for all the veggies to get cooked.
